In Buffalo, it's known as sponge candy, but here at the beach, we call it seafoam. The Brits call it honeycomb, Aussies know it as crumble, and some Canadians recognize sponge toffee.
Whatever you call it, Keith worked on this recipe with over 40 iterations before he was happy with the results. It's not like Buffalo sponge which disappears as soon as it hits your tongue. Our variation starts with a big crunch and finishes with a small chewy honey nugget.

Keith's C-Foam Ingredients: Brown sugar, apple cider vinegar, honey, bicarbonate of soda;
White Pastel Coating: Sugar, palm kernel oil and palm oils, whey, nonfat milk, titanium dioxide color, sunflower lecithin, natural flavor, and vanilla.
Milk Chocolate: Sugar, unsweetened chocolate, milk, cocoa butter, sunflower lecithin [emulsifier], and vanillin [artificial flavor].
Dark Chocolate: Unsweetened chocolate, sugar, cocoa butter, milk fat [butter], sunflower lecithin [emulsifier], and pure vanilla.
